Turkey Italian Sausage Spaghetti Casserole

Ingredients

5 Jennie-O Sweet Italian Sausages (1package has 5 sausages)
1 box of Dreamfields Penne Rigate (6.5 servings)
1 jar of Safeway Select Basil Garlic Pasta Sauce or sauce of your choice
4 medium zucchini, chopped
1 medium onion, chopped
1/2 cup Eggbeaters
1-2 cups Kraft shredded 2% Mozzeralla Cheese
2 - 4 tbsp. Kraft Parmesan Cheese
2 tbsp. Olive oil
Directions
Heat oven to 400 degrees
Spray a 9x13 pan with olive oil cooking spray
Cook pasta according to directions on the package. Rinse with cold water and add to mixing bowl. Add eggbeaters and 1/2 cup of shredded mozzarella cheese and mix well. Pour into prepared 9x13 pan and set aside.
WHILE THE PASTA IS COOKING - Heat a non-stick skillet add olive oil. When hot add onion and saute for 5 minutes. Add zucchini and saute to golden brown. add sausage and cook through.
Add sauce to mixture in skillet and mix well. Pour on top of pasta in pan. Sprinkle evenly on top with 1/2 - 1 cup of the remaining shredded cheese. Sprinkle with 2-4 Tbsp of parmesan.
Bake at 400 til golden brown on top. Remove from oven and let cool before cutting into 8 squares.
Serve with nice big green salad. YUMMY!
