My sister gave me this recipe, but the original recipe required 1 egg. One day I didn't have any eggs and did a little online research and found out that you can replace egg with applesauce in some baking recipes. DELICIOUS! Ingredients

    1 1/3 cup All-Purpose Flour, 1.33 cup
    3 Tbsp Sugar
    1 Tbsp Baking Powder
    1/2 tsp Salt
    2 Tbsp Applesauce, unsweetened
    1 1/4 cup Silk, Vanilla Soymilk
    3 Tbsp Butter, unsalted (melted)
    1/4 Vanilla Extract

Directions

Mix all ingredients.
Cook on a nonstick pan turning once.
