EZ Slow Cooker Chicken Soup (1 cup = 1 serving)

Introduction

This Plan-Ahead-and-Go Meal is EZ. Simply toss into slow cooker pot and cook. It is ready 7 hours on LOW setting. The chicken is PRE-ROASTED at the store. I remove skin and other things that are not wanted....the night before and I cook the leftovers (meat goes directly into a container to store separately)...for the chicken broth. I defat the broth in the morning and store extra broth that I won't need for this soup in the freezer in freezer containers. Season the way you like it...and add some of your favorite veggies. Ingredients

    1 Roasting Chicken, light meat, 4 cup, chopped or diced
    1 Chicken Thigh from same roaster chicken
    1 Chicken Drumstick from same roaster chicken
    6 cups Chicken Broth, canned or home made
    1 Red Potato, about 100 grams, cut up large in quarters
    1 Medium Onion, raw, (2-1/2" dia), cut up in quarters
    1 Green Bell Pepper 1 cup, strips cut up in quarters
    2 Large Tomatoes (or about 15 cherry tomatoes) cut up

Directions

In Slow Cooker Pot place Tomatoes in first, then Other vegetables, and then your Chicken and Chicken Broth. Put on LOW and let cook slowly for seven hours.

If you use your own chicken broth, prepare this the night prior so that you can defat it the next morning easily.

You may wish to add seasonings such as one or two chicken bouillon cubes. I didn't add them as most foods have plenty of salt in them already. However, the seasoning is left up to you and your palate.

This healthful soup is a wonderful winter soup and one can add whatever vegetables that you may have on hand...to the pot.
