Introduction

Number of Servings: 18

Ingredients

    1 cup cooked oatmeal
    1 cup water, warmed.
    1 Tb yeast (1 packet)
    1/4 C packed, brown sugar
    1/4 cup canola oil
    2 tsp salt
    2 cups whole wheat flour
    2 cups unbleached flour
    extras:
    1/3 C powdered milk
    1/2 C ground flax seed

Directions

Start with 1 cup cooked (leftover) oatmeal, add 1 cup of water, 1 packet of yeast (1 Tbsp), 1/4 cup oil, 1/4 cup brownsugar, 2 generous cups of whole wheat flour. Mix well and let it set for 30 minutes if you have time. Work in the 2 tsp. of salt and 2 generous cups of unbleached flour, kneading into a happy, smooth, dough. OR: throw everything in the bread maker and set it to mixing and kneading on the "dough" setting. Raise. punch down and roll into 18 rolls, flattening them into perfect-sized sandwich buns. Rise again. Bake @ 400 F X 15 minutes.
I often add 1/3 C powdered milk, and 1/2 Cup of ground flax seed to enhance the nutrition.
