V8 vegan chili

Introduction

This protein packed chili is low in fat and is a wonderful vegan option. While I experiment with different types of V8, the low sodium option is my favorite... it lets me play with spices! Feel free to play with different kinds of veggies and legumes. I like the black beans to give a little southwestern flair and contrasting color. Number of Servings: 6

Ingredients

    1 can yellow corn
    1 can red (kidney) beans
    1 can black beans
    1 46oz jar V8 (low sodium)
    1 onion, diced
    4 stalks celery

Directions

Heat V8 juice in large container. Chop up onions and celery, and put them into the pot. Open and drain all cans, and place contents into pot. Cook until vegetables are warm. Do not allow chili to come to a rolling boil - turn down heat when a boil becomes evident.

Serving Size: makes approx. 6 servings (1 cup)
