Brown Rice and Lentils

Introduction

Simple and filling rice dish. Can be topped with a variety of items including cheese, steamed spinach, tomatoes, or other vegetables, if desired. Good as a taco/ burrito filling

Ingredients

    1 tsp Olive Oil
    3/4 C chopped onion
    1 clove garlic
    1/2 jalapeno, chopped
    3/4 C lentils
    3/4 C brown rice
    1 cube Knorr chicken boullion
    1 tsp crushed cumin
    1 tsp ground black pepper
    3 C water

Directions

Heat olive oil in small pan, saute onion, jalapeno and garlic until soft and slightly browned. Add all ingredients, including sauteed vegetables to cooking bowl of rice cooker. Set to cook. When done, let sit 10 mins before opening cooker.
