Bacon Ranch Pasta Salad

Introduction

I serve this with Chicken Thighs Breaded w/Crispy Fried Onions and it is a great combo! I serve this with Chicken Thighs Breaded w/Crispy Fried Onions and it is a great combo!
Number of Servings: 8

Ingredients

    16 oz box Rainbow Rotini
    1 cup Ranch dressing
    2 strips cooked bacon
    3/4 cup yellow peppers, diced
    1/4 cup red peppers, diced
    1 cup cooked frozen corn
    16 oz. can black beans

Directions

Boil pasta and drain. While pasta is cooking drain and rinse place beans, then add beans, corn, diced peppers, and bacon strips to a large serving bowl. When pasta is cooked and drained add it to the serving bowl also and toss everything together. Finally, add the ranch dressing and stir until ingredients are coated evenly.

Set in refrigerator covered for 20-30 minutes to cool, and then serve.

Serving Size: Makes 8 1-cup servings
