8 Medium Carrots or 8 Handfuls of Baby Carrots, Chopped
1/2 Yellow Onion, Chopped
4 Raw Garlic Cloves, Peeled and Chopped
Oil for Sauteeing (Optional for less fat)
1/2 Teaspoon Salt
1/2 Teaspoon Pepper
1 Tablespoon or 1" Block of Ginger Root
2/3 Cup Drained Crumbled Tofu
2 Cups Vegetable Broth
2. Lightly oil a large skillet or frying pan and and sautee your chopped carrots, onion and garlic until softened. 10-15 Minutes.
3. Place softened chopped veggies and all remaining ingredients in a blender. Blend until smooth and silky.
4. Return soup to a pot and heat through. Enjoy!
It's a delicious and quick way to get a good helping of veggies on a busy night!
