This recipe is super easy, fast, nutritious, and delicious. Perfect as a lower-fat substitute for refried beans, or a different twist on hummus. This recipe is super easy, fast, nutritious, and delicious. Perfect as a lower-fat substitute for refried beans, or a different twist on hummus.
Number of Servings: 16

Ingredients

    1 can light kidney beans, drained
    1 clove garlic
    1 tablespoon chopped onion
    1 chile or Jalapeno pepper, deseeded and chopped
    1 tablespoon olive oil
    1/2 teaspoon salt
    1/2 teaspoon ground cumin
    1/2 teaspoon chipotle chili powder

Directions

Place all ingredients in a blender or food processor. Process until smooth. Enjoy! I love it on a corn tortilla, topped with fresh tomatoes and cilantro, plus a dollop of plain Greek yogurt as a substitute for sour cream.
