Sausage Squash Casserole

Introduction

Hearty lunch for 8 or use as a side dish for many.
I enjoy this for lunch or dinner with some sliced tomatoes on the side.

Number of Servings: 8

Ingredients

    6 Cups summer squash, sliced
    1 onion, sliced
    4 carrots, shredded
    1/2 Cup bread crumbs
    1/2 Cup 2% milk
    2 eggs, slightly beaten
    1/2 Cup shredded cheddar cheese
    1/2 Cup Parmesan cheese
    1 Lb. pork sausage
    Garlic, minced
    Parsley
    Salt
    Pepper

Directions

Preheat oven to 350. Simmer squash, carrots &onions in a little water until tender, drain. In a separate pan, brown sausage and garlic and drain. Combine squash mix, sausage & garlic, bread crumbs, milk, eggs, Parmesan cheese, parsley, salt and pepper. Put in a glass baking dish and sprinkle with cheddar cheese. Bake for 30 minutes.

Serving Size: Makes 8 servings of a hearty meal or 16 servings as a side dish.
