10 eggs 1/3 cup cream 1 10-oz package spinach (thawed, drained and squeezed dry) 2 cloves garlic, minced 1/4 tsp nutmeg 1/2 tsp salt 4 oz feta cheese 1 pound ground sausage
Preheat oven to 425 (400 if using a dark pan). Brown ground sausage and garlic together. Mix together eggs, cream, nutmeg and salt. Add spinach and sausage mixture. Grease muffin tins. Add about 2 teaspoons of feta cheese to each cup, and fill with egg/spinach mixture almost to the top.
Bake for 20-30 minutes or until set.
