Introduction

Tasty salad serving up those healthy Omega-3 fatty acids and an appetite-pleasing amount of protein 20g without much carbohydrates. Be sure to use Bear and Wolf or other quality salmon and safflower mayonnaise (Hain or other). Use expeller pressed canola if you can't find nut/seed mayo. Number of Servings: 3

Ingredients

    2 - 6 ounce cans Bear and Wolf salmon, drained
    1/3 c. Hain mayonnaise
    2 to 3 TB dijon mustard
    fresh dill, 1 TB chopped (I like lots!)
    fresh-cracked pepper (to taste)
    1/2 - 1 C celery, small dice (optional)
    1/4 c. raw onion, small dice

Directions

Place salmon in medium mixing bowl. Use fork to break apart chunks. Add remaining ingredients and combine. Serve immediately or refrigerate to allow flavors to meld.

Serve with tomato slices and/or cucumber slices (in place of bread) for a complete meal.

Serving Size: Makes 2 cups (or 3 x 2/3 c serving)
