Homemade Spaghetti Sauce

Number of Servings: 20

Ingredients

    7.8 lb peeled, cored tomatoes (about 12 lbs fresh Romas makes this amount)
    40 oz chopped onion
    5 cloves garlic
    1/4 cup chopped bacon
    2 lb ground beef
    10 oz red wine
    basil (20 leaves or so)

Directions

Cook bacon and onion until onion softens. Add ground beef and garlic; cook until beef is browned. Drain any grease. Add tomatoes, wine, and basil, and cook until reduced to about 1/3 original volume (about 2.5 quarts).

Serving Size: Makes about 20 1/2-cup servings
