Alex's 30min French Onion Soup

Introduction

Husband's-Night-to-Cook Winter Dish Husband's-Night-to-Cook Winter Dish
Number of Servings: 2

Ingredients

    1t. bacon grease (shortening if vegetarian)
    2 onions (Vidalia, preferably)
    Dash of salt
    1 clove garlic
    1 whole bay leaf
    2c. low-sodium broth (Homemade is better.)
    7-8 dash Lea & Perrin

Directions

Heat one heavy saucepan with bacon fat and a dash of salt. Mince one onion and julienne the other. Caramelize onions in pan.
Crush garlic and add to pan. Add a bay leaf, broth, and Lea&Perrins. Bring to a boil. Simmer for a while. Eat while hot.

Optionally, pour into ramakins, placing a slice of toasted french bread on top. Shred swiss or mozzarella onto this and broil <5min until top is bubbly and yellow. This recipe does not include calories from toast topping.
