Skinny Chicken Fettuccine Alfredo Sauce

Introduction

Although this is not low-fat. It is lower in fat and calories than the original recipe we found on the internet. I have been working with this recipe for awhile, and think I have finally gotten it down. Although this is not low-fat. Ingredients

    1/2 C Brummel and Brown Spread
    2 Tbsp flour
    3 Tbsp reduced fat cream cheese
    12 oz can evaporated milk, fat free
    1/2 C nonfat milk
    2 cloves garlic, pressed
    black pepper to taste
    2/3 C parmesan cheese, shredded
    6 oz chicken, cooked and diced into small pieces
    12 oz (dry weight) fettucine noodles, cooked according to pkg instructions

Tips

You may choose to add chopped, steamed broccoli or drained, canned mushrooms when adding chicken.

Directions

In a large pan at medium heat, melt Brummel and Brown, along with the garlic. Using a whisk, add flour and saute for a few minutes to make a roux. Add cream cheese. When the cheese has melted and the mixture begins to thicken slightly, add nonfat milk. When mixture begins to thicken, add evaporated milk. Continue to cook, stirring constantly until thickened and bubbly. Season with pepper.

Remove from heat and stir in diced chicken and parmesan cheese.

Pour over prepared fettucine noodles, and stir with large spoon or spatula to coat.
