Homemade Zuppa (lean)

Introduction

Delicious, spicy potato and kale soup. Delicious, spicy potato and kale soup.

Ingredients

    1 Tbls unsalted butter
    1/2 Tbls evoo
    3 cloves garlic - minced
    1/2 med. onion - diced
    2/3 cup low fat jimmy dean crumbled turkey sausage
    crushed red pepper to taste (about 1.5 Tbls for me)
    2 medium baking potatoes with skin, large diced
    10 cups homemade chicken stock
    8 packed cups Kale, chopped
    1 cup skim milk

Directions

Saute onion and garlic in butter and olive oil until it almost soft. If it gets too dry, add a little stock. Toss in the pre-cooked sausage crumbles and the diced potatoes and saute about 3-5 minutes. Add crushed red pepper and chicken stock. Bring to a boil, reduce heat and simmer about 15-20 minutes until potatoes are starting to get soft but still firm. Add in kale and cook about 3 minutes. Stir in milk and let simmer another 5 minutes but do NOT boil after you put milk in the pot. Add more crushed red pepper, salt and ground black pepper to taste.

Serving Size: Makes 13 servings - 1 cup each
