An old Irish favorite, very filling and good with eggs or breakfast meat. the measurements on the spices are approximate. As they have little caloric impact, feel free to change them up. Ingredients

    Red Potato, 100 grams (about 2 medium potatoes)
    Sweet peppers (bell), 1 medium (approx 2-3/4" long, 2-1/2"
    Onions, raw, 1 cup, chopped
    Salt, 1 tsp
    Pepper, black, 1 tsp
    Dill weed, dried, 1 tbsp
    Paprika, 1 tsp
    Curry powder, 1 tsp
    4 tblsp Cooking oil (anything that can take a bit of heat)

Directions

Chop onions and peppers into no smaller than 1/2 inch cubes. I like big chunks so sometimes they're bigger. Heat oil over medium high heat, in 9-10 inch skillet. Once the oil is hot, add onions and fry until they start to turn clear. Add peppers. Chop potatoes into 1 inch cubes and add to pan. Stir, cover and let cook for five minutes.
Stir, cover and cook another 3-5 minutes or until peppers are tender and potatoes are cooked through.
Serve with choice of protein.
