Chicken Spinach Stuffed Buns

Introduction

Kaiser rolls stuffed with cream cheese, chicken, and spinach mixture. The rolls become very crisp after baking and the inside is warm and gooey and delicious! (Note that the calorie count will actually be slightly less than the recipe states because the rolls are hollowed out and much of the bread is thrown away). Ingredients

    5 oz Gold N Plump All Natural Chicken breast
    3 oz Fat Free Cream Cheese, softened/room temp
    1/8 cup DiGiorno Shredded 3 Cheese Blend (or shredded Parmesan)
    2/3 cup Frozen chopped spinach, thawed and pressed dry
    1 slice Sargento Reduced Fat Deli-Style Swiss Cheese, halved (or pepperjack or other cheese of your choice)
    2 - 4" Hard Rolls or Bollilo Rolls (about 200 calories each)
    1.5 TBSP Fat Free Sour Cream
    .5 tsp Garlic Puree (or 2 cloves garlic, pressed)
    1.5 tsp Mrs Dash Original Blend Seasoning

Directions

Cut chicken into bite sized pieces and cook in skillet until no longer pink.
While chicken is cooking, preheat oven to 350d
Thaw spinach and press in paper towels until thoroughly dry.
In a medium mixing bowl, combine cooked chicken, cream cheese, shredded parmesan, spinach, sour cream, garlic puree, and Mrs. Dash. Stir until thoroughly combined.
Cut the tops off of each of the rolls, saving the tops.
Hollow out each roll - creating a "shell". (Throw away most of the inside, but leave a thin layer of bread in the shell).
Evenly divide the chicken mixture into the 2 rolls, packing tightly.
Press 1/2 slice of Swiss cheese (or pepperjack or other cheese of choice) onto the top of the chicken/spinach mixture in each bowl.
Replace the tops on the rolls
Wrap each roll tightly in aluminum foil
Bake for 20-25 minutes.
