I created this dish for something a little spicy yet filling and comforting- my family loved it and has decided it will be a regular addition to our menu! Ingredients

1 lb. 93% lean ground turkey
2 cloves garlic, minced
1 medium green bell pepper, chopped
1 small onion, chopped
6 oz. (dry weight) no-yolk noodles
1 (15 oz.) can diced tomatoes, undrained
3-4 Tbsp. taco seasoning (to your taste)
1/2 cup water
2 Tbsp. tomato paste
6 oz. reduced fat Mexican Blend cheese, shredded
Directions
Cook noodles according to package directions; drain and set aside. In medium saucepan, combine ground turkey, garlic, green pepper, and onion- cook, stirring and breaking up meat, until meat is browned and vegetables are beginning to soften. Stir in canned tomatoes with their juice, taco seasoning, water, and tomato paste; simmer (stirring occasionally) for 5-6 minutes till all vegetables are tender and flavors have blended. Combine the meat/vegetable mixture with the noodles, and transfer to a 2-3 qt. baking dish. Sprinkle the top with the cheese. Bake at 350 F for 15-20 minutes till everything is heated through and the cheese has melted over the top.
