1-1.25 lbs beef stew meat 1/4 c flour 2 tbs canola oil 1 medium onion, diced 3 cloves garlic, minced 2 cans beef broth, followed by 2 cans of water 1- 28oz. can diced tomatoes 1/4 c chopped parsley 3-4 medium potatoes, peeled and diced 1-10oz package peas and carrots, frozen salt & pepper to taste
Salt & pepper beef pieces to taste, coat in flour and shake off excess. Heat dutch oven or other large pot over medium high heat and add 1 tbs oil. Brown beef for 1-2 minutes and remove from pan. Add additional tbs oil and onion and garlic and sautee for 2 minutes until softened. Add Beef broth and scrape brown bits from bottom. Add water, tomatoes, beef and parsley to pot and simmer for 2 hours, partially covered, stirring occasionally. Prior to last half hour of cooking, add potato. 5 minutes before serving add frozen peas and carrots and stir to heat through.
This recipe is easy, healthy, and kids love it. It makes approximately 8 - 1 cup servings.
