Cauliflower-pineapple salad with crabsticks

Ingredients

    350g raw cauliflower
    170g (appr. 1 c) canned pineapple in juice
    160g crabsticks
    50g light mayonnaise
    65g reduced fat sour cream (10%)
    5g flaxseed oil
    salt and pepper to taste

Directions

Wash cauliflower and break it into small pieces. Drain pineapple. Cut crabsticks. Stir all ingredients in a large bowl, add salt and pepper to taste.

Serving Size: makes 4 200-g servings
