Introduction

I found this recipe on cooks.com. I made this recipe after i had tried another from prevention mag that used wasabi which was very spicy and hard to eat. Number of Servings: 8

Ingredients

    1 lb chopped cucumber
    2 tbsp margarine
    1/4 chopped scallions
    4 c chicken broth
    1 tsp wine vinegar
    1/2 tsp dill weed
    salt and pepper to taste
    1/2 c sour cream

Directions

Peel cucumber and chop into 1/2 in chunks. melt butter or margarine in lg saucepan.Stir in onion and saute 2 minuytes. Add cucumber, broth,vinegar and dill weed and bring to a boil.

Simmer uncovered 20 minutes. Puree in blender. Stir in the sour cream and chill for several hours. Ladle in chilled bowls and top wih tsp of sour cream and chopped cucumbers.

Serving Size: 1 cup
