Carrot Rice Nut burgers

Introduction

I got this from allrecipes.com, but used almonds instead of sunflower seeds and this recipe makes 27 burgers instead of 20. I got this from allrecipes.com, but used almonds instead of sunflower seeds and this recipe makes 27 burgers instead of 20.
Number of Servings: 27

Ingredients

    3 C. uncooked brown rice
    6 C. water
    1 C. roasted cashews
    1 C. roasted almonds
    1 large onion, raw
    6 medium carrots, raw
    1 Tbsp. Olive Oil
    1 1/2 tsp. salt

Directions

In a large pot, bring the rice and water to a boil. Reduce heat to low, cover, and simmer 45 minutes.
Using a food processor, grind the toasted cashews and almonds to a fine meal. Transfer to a large bowl. Pulse the onion and carrots in the food processor until finely shredded, and mix with the ground nuts. Place the cooked rice and olive oil in the food processor, and pulse until smooth. Mix into the bowl. Season with salt. Form the mixture into patties.
Preheat oven to Broil High, or 500 Degrees F. Bake for 15 minutes at 500 or 10 on broil.

Serving Size: Makes about 27 2 inch round patties
