'Clean Eating' Chocolate Banana Muffins

Introduction

I did not have pumpkin or juice or my 'usual' clean eating pumpkin applesauce muffins so I substituted bananas and dark chocolate almond milk and loved the results. Number of Servings: 12

Ingredients

    1 cup old fashioned oatmeal
    1/2 cup mashed banana
    1/2 cup unsweetened applesauce
    1/2 cup dark chocolate almond milk
    2 large eggs
    2 T plus one tsp canola oil
    3/4 cup whole wheat flour
    1/4 sucanet
    1 T double acting baking powder
    1/2 t baking soda

Directions

Mix oatmeal, banana, applesauce, almond milk, oil and eggs until all are blended. Measure and mix all dry ingredients. Make a well in the center and pour wet ingredients. Mix until just moistened. Fill muffin cups 2/3 full and bake 15-20 minutes.
