Wild Rice Thanksgiving Casserole

Ingredients

    Mushrooms, 10 medium, sliced
    Celery, raw, 2 stalk, sliced
    Ground Pork Sausage, 2 oz
    Craisins Original Sweetened Dried Cranberries 1/3 cup
    Turkey Gravy, 0.5 cup
    1 Box Uncle Ben's Long Grain & Wild Rice
    Chicken Breast, shredded

Directions

Boil Chicken breast, saute celery and mushroom (in water) and fry pork sausage in any order you'd like. Cook box of Uncle Ben's according to package, omitting margarine. Shred chicken. Combine rice, chicken, sausage, and veggies in a baking dish, stir. Add craisins and gravy, stirring. Cook in oven at 400 degrees until brown or top is crisp.

**To make this dish have less fat, I often use Morning Star Sausage (veggie sausage), it has great flavor and in a dish like this you can't tell the difference.

Serving Size: Makes about 6 1-cup servings.
