Thai chicken in curried rice (~1c rice + 1/2 breast)

Introduction

Adapted from Nancie McDermott's Quick & Easy Thai recipe, for my family's logging purposes. Adapted from Nancie McDermott's Quick & Easy Thai recipe, for my family's logging purposes.
Number of Servings: 6

Ingredients

    1 Tbsp oil
    3 cloves garlic
    1 medium onion, chopped
    1 Tbsp curry powder
    1 tsp salt
    1/2 tsp pepper
    3 chicken breasts, cut into chunks
    2 c rice
    2.5 c chicken broth
    cilantro to taste

Directions

Saute onion, garlic & spices in oil for a minute, add chicken chunks. Saute another 3 minutes, then remove chicken pieces. Add rice, saute 3 minutes.
Add to rice cooker: 1/2 the rice, the chicken, & the other 1/2 of the rice. Start cooking process.

Serving Size: Makes 6 1-cup servings
