Shrimp & Broccoli Packets

Ingredients

    12 oz shrimp, peeled & deveined
    1 1/2 cup broccoli crowns
    1/2 cup brown rice
    Paul Purdhomme Seafood Seasoning
    2 tsp Smart Balance Light
    2 garlic cloves, finely diced
    1/2 cup water
    8 ice cubes
    2 sheets aluminum foil

Directions

Preheat oven to 350

Put 1/2 peeled shrimp on each sheet of foil. Pour 1/4 cup brown rice around shrimp. Sprinkle with seafood seasoning. Sprinkle with garlic. Put 1/2 cup broccoli crowns on top. Add 1/2 Tbsp Smart Balance to each. Place 4 ice cubes on top and fold foil, creasing top and sealing one side. Pour in 1/4 cup water and seal other side. Repeat with other packet.

Bake in 350 oven for 20 minutes.
