Mixed Vegetable Soup

Ingredients

1 1/2 packets frozen mixed vegetables
1 Tsp salt
Dried Oregano
Corn Flour
Low fat milk
2 Onions
5 Cloves Garlic
Ginger
Olive Oil or Vegetable Oil
2 potatoes
Directions
Slice the 2 onions, garlic and ginger. Put in a food processor.
In a medium size saucepan add the oil, onion, garli and ginger. Let them cook for 2-3 minutes.
Add the salt and the other spices
Boil the potatoes until they are soft.
Then put the patatoes in with the onions.
Once they are cooked, add the frozen mixed vegetables.
In a glass pour in the Low fat milk and add 2 tsps of cornflour and mix well.
Then pour the mixture into the pot with the vegetables.
Keep stirring to make sure it doesn't stick to the bottom of the pot.
Turn down the heat and let it cook for 45 minutes.
It will make around 10 servings.
