Spicy Hot Italian Sausage Ragu

Introduction

this recipe is vegetable rich and they are nearly impossible to detect -
I originally developed this recipe for stuffed manicotti and it works well for that purpose but because this recipe cooks up quickly and can be made ahead, it is a good weeknight dinner option.

I don't normally use low fat parmesan cheese or turkey or chicken italian sausage, but calorie count and fat grams would be lower if these ingredients were used.

Ingredients

    Big Y Hot Italian Sausage - 7 links - casing removed
    Mushrooms, 8 oz - chopped very fine
    Carrots, raw, 2 large - chopped very fine
    celery, raw, 2 stalk, large- chopped very fine
    Onions, raw, 2 medium - chopped very fine
    Sweet Red Pepper 1/2 large - chopped very fine
    Shallots, 3 tbsp chopped very fine
    Garlic, 6 clove - chopped very fine
    Parmesan Cheese, grated, 1/2 cup
    White Wine, good qualify - 8 fl oz (I use Pinot Grigio)
    Fat free half and half, 1/2 cup
    Tomato Paste, 1/2 can
    Basil, 1 tbsp or to taste
    Oregano, ground, 2 tsp
    Pepper, red or cayenne, .1/2 tsp or to taste
    Pepper, black, 1 tsp or to taste
    3 whole bay leaves

Directions

heat olive oil in large frying pan
chop all vegetables in a food chopper or food processor until fine and about the consistency of small grains of rice- don't worry if the veggies seem small -
add to heated olive oil
cook until translucent/soft
while vegetables are cooking add spices and bay leaf
when vegetables are soft, push to side of pan
crumble sausage as small as possible and add to pan
cook sausage until nearly done continuing to break up sausge into small bits
turn heat to high
carefully pour in white wine and cook until on high unitl alcohol is cooked away
reduce heat to medium low
add parmensan cheese, tomato paste and stir well
add half and half and stir well again
simmer on low stirring often for about 4-5 minutes

Serve on sturdy pasta such as linguine or penne
Can also be used as a stuffing for manicotti or shells
Calorie count does not include pasta
Makes 6 cups of sauce - I think that a 1/2 cup is a generous serving.
tastes even better second day.
