Introduction

Ingredients

    1 cup TVP (bob's red mill), prepared
    1/3 cup garbanzo flour
    1/3 cup soy protein powder
    1/4 cup wheat gluten
    2 Tble Nutritional yeast flakes
    2 cloves garlic
    1/2 tsp salt
    2 Tble distilled white vinegar
    1/2 tsp black pepper
    1/2 tsp mexican cinnamon
    1/4 tsp cloves
    1/2 tsp oregano
    2 Tble dry sherry
    1/2 tsp sugar
    2-4 oz dry chile, ground
    2 Tble ground flaxseed

Directions

Mix first 14 ingredients in a large bowl.

stir ground chilies into about 1/2 cup boiling water. Stir to make a paste.

Mix well into sausage mix. Cover, and let set overnight for flavors to develop.

Heat in large non-stick skillet. Does not really brown, but gets drier.

Freezes well.

Makes 10 1/3-cup servings
