Pizza with Zucchini Crust, Low Carb (IF)

Ingredients

    Ingredients for crust:
    2 cups of zucchini (grated)
    cup mozzarella cheese
    2 tablespoons grated Parmesan
    2 tablespoon flax seed meal
    1 beaten egg
    1 teaspoon Italian seasoning
    1 tsp garlic powder
    1 tsp olive oil

    Toppings:
    1/2 cup of Bella Vita low carb roasted garlic tomato sauce (no sugar added)
    1/2 cup of mozzarella cheese
    16 Pepperoni slices
    Olives, red pepper, mushrooms, etc. (optional)

Directions

1. Shred zucchini & lay on a paper towel to dry out excess water. Squeeze out the excess water with the paper towel.

2. Mix all ingredients together with zucchini.

3. On a parchment paper, spread out the zucchini mixture to form a circle pizza shape.

4. Bake at 400 degrees for 15 minutes.

5. Remove from the oven & brush with olive oil.

6. Bake for 10 minutes more at 400 degrees.

7. Remove from oven. Lift & remove baking pan from the parchment paper & leave the pizza on the parchment paper to cool for 10 minutes.

8. Top with your favorite toppings & return to the oven & bake at 400 degrees until cheese melts (about 5-6 minutes)
