YUMMY BURRITO CASSEROLE

Introduction

This was very good for a vegetarian meal. This was very good for a vegetarian meal.

Ingredients

    1 package Success Instant Brown Rice, cooked
    1 cup salsa
    1/4 teaspoon oregano
    1/4-1/2 teaspoon chili powder
    1/4 teaspoon cumin
    1 cup refried vegetarian beans
    1/2 cup frozen corn, thawed
    1 cup shredded red-fat taco blend cheese
    1 packages (10 oz)
    3 green onions & cilantro garnish (optional)



Directions

1. In medium bowl, combine rice salsa and oregano. In second medium bowl, combine refried beans, corn, chili powder, and cumin
2. In a 8X8 sprayed baking dish with non-stick cooking spray
spread half the rice mixture evenly in bottom of dish. Layer refried bean mixture and 1/2 cup cheese over the rice mix. Scatter spinach over cheese. Top with rest of rice mixture.
3. Cover with foil, and bake at 350 degrees. Bake for 25-30 minutes or till heated through.
4. Remove foil and carefully sprinkle remaining 1/2 cup cheese over top. Return to oven, turn off heat and allow cheese to melt.
5. Sprinkle with onions and cilantro

Serving Size: 3 servings of 1 1/8 cup
