Introduction

Barley is cooked in broth and then combined with sauteed mushrooms and onions Barley is cooked in broth and then combined with sauteed mushrooms and onions
Number of Servings: 4

Ingredients

    1.5 cups fresh mushrooms, chopped
    1 cup onions, chopped
    1 tsp olive oil (or cooking spray) for saute
    2 cups chicken broth, 99% fat free
    1 cup pearled barley
    Thyme to taste
    Salt to taste

Directions

Bring 2 cups of broth to a boil. When boiling, add barley and cook for 10 minutes or until soft. While barley is cooking, saute onions and mushrooms in olive oil or cooking spray. When fully cooked, combine with barley. Add thyme and salt to taste.
