Curried Rice

Introduction

One-Dish Low Cal Curried Rice One-Dish Low Cal Curried Rice
Number of Servings: 2

Ingredients

    1 onion, chopped
    1 cup white rice
    1 carrot, chopped
    2 cups water
    1 1/2 teaspoons yellow curry powder
    1 tablespoon vegetable or chicken bouillon
    1 teaspoon italian seasoning
    1/4 raisins (golden are best)
    2 eggs
    1 teaspoon oil for pan

Directions

In a sauce pan with a lid saute onions in oil until lightly browned. Add rice, carrot, water, curry powder, bouillon, Italian seasoning, and raisins. Bring to a boil. Cover and simmer for 15 minutes.

Beat eggs and fry in patty like and unfolded omelet. Cut into strips. Serve on cooked rice.
