Ingredients

Juice of 1 orange
2 tsp mild curry powder or paste
200g whole-wheat couscous
50g sultanas
300ml boiling water
250g smoked mackerel fillet
1 small red onion - finely chopped
1/2 red pepper, deseeded and diced
2 tomatoes diced
small bunch of fresh coriander roughly chopped

Directions
Put the orange juice and curry powder into a medium sized bowl and fork together. add the couscous, sultanas, and a little pepper, then add the boiling water and fork together. leave to stand for 5 minutes.
Peel the skin off the mackerel fillets and break the flesh into large flakes, discarding any bones.
Add the mackerel, onion, red pepper and tomatoes to the couscous and mix together lightly. Sprinkle the coriander over the top and then spoon on to plates.
Serving Size: Makes 4 large servings
