Ingredients



    * Red Ripe Tomatoes, 5 lbs. or about 10 cup, blanched, peeled and chopped
    * Tomato Paste, 1 can (6 oz)
    * *Bell Pepper, Green (Medium Raw), 1, diced
    * Onions, raw, 1 medium (2-1/2" dia), chopped
    scilling Italian Medley Seasoning Blend, 1.0 tsp or to taste - I chopped 1 T. fresh basil, 1 t. thyme and added dried oregano and the spice blend to taste
    * Garlic, 3 cloves , chopped or one large clove elephant garlic

Directions

Blanch tomatoes by dropping one by one into boiling water for 30 secs. to 1 minute, then retrieve and drop immediately into ice water. This will loosen the skins. Pierce with point of knife, remove peel. Chop flesh and put into large sauce pot, with rest of ingredients. Bring to simmer and continue simmering 4 to 5 hours, stirring occasionally, until desired thickness is reached. Use on pasta immediately or can by pouring, hot, into hot jars. Add 1 Tablespoon bottled lemon Juice to each jar before sealing with canning lids. Process in waterbath canner, water 2 " above top of the sealing jars, for 40 minutes at sealevel to 1000 feet. Add 10 minutes processing time for each 3000 feet above this if you are working in higher elevations. This is a modification of a Taste of Home recipe. After opening each jar, you may add cooked ground beef or turkey or other meat to this for flavoring if you wish, for extra calories, or serve reheated as is for a vegetarian sauce.
