Introduction

A delicious dinner with chicken, tomatoes, beans and mixed veggies that my hubby and I came up with after spending the day trimming our bushes. A delicious dinner with chicken, tomatoes, beans and mixed veggies that my hubby and I came up with after spending the day trimming our bushes.
Number of Servings: 4

Ingredients

    2 - Chicken Breasts, boneless, skinless
    1 - 16 oz. can whole tomatoes including juice
    1- can Garbanzo Beans (chick peas0
    1/2 can tomato paste
    1 1/ 2 cups frozen mixed vegetables
    salt and pepper to taste
    Basil
    Oregano
    Herbs De Provence

Directions

Cut chicken breasts into bite size pieces and brown in dutch oven. Cut tomatoes into quarters and add to pan along with the juices. Rinse and drain the beans (lowers the sodium but does not reflect in the nutritional info) and add to pan along with all other ingredients and stir. Cover and simmer over medium low heat stirring occasionally for 30 minutes until chicken is cooked. Enjoy!
