Stroganoff Style Chicken & Noodles

Introduction

A recipe from a friend (and I am sure she got it from the back of a soup can).

Try with a low fat/sodium/healthy request soup. This one was what I had at hand.
This makes a good all round meal, and you do not need anything else.

Number of Servings: 4

Ingredients

    *GV Pure Vegetable Oil, 2 tbsp (remove)
    *Chicken breast - boneless skinless frozen GV, 16 oz (remove)Thawed and cut into strips.
    Mushrooms, fresh, 2 cup, pieces or slices (remove)About 6oz
    *Onion - Raw, chopped, 0.5 cup (remove)
    *Cream of Chicken Soup, condensed Great Value, 10.5 oz (remove)
    *GV Fat Free Plain Yogurt, 0.5 cup (remove)
    Water, tap, 0.25 cup (8 fl oz) (remove)
    GV Extra Wide Egg Noodles 1.5 dry cups = 1 Serving, 3 serving (remove)approx 4 cups
    Paprika, 1 tsp (remove)for sprinkling over dish

Directions

Heat 1 Tablespoon of the oil in a 10 inch skillet over mediu, high heat.
Add the chicken and cook until well browned, stirring often.
Remove the chicken from the skillet.
Heat the remaining oil in the skillet over medium heat.
Add the mushrooms and onion and cook until they are tender.
Stir in the soup, yogurt and water in the skillet and heat through (Take care not to let the liquid come to a boil or the sauce will curdle - this will not impair the flavour just will not look creamy).
Meanwhile cook the noodles as per pack instructions but without salt, and drain.
Return the chicken to the skillet, reduce the heat to low and continue to cook until the chicken is cooked through.
Sprinkle with the Paprika if desired.
Serve the chicken and sauce over the noodles or stir in the noodles before serving.
Serve with a side salad or some veggies of your choice.
