Introduction

My mother-in-law created this recipe that I have fallen in love with. The dried fruit, seeds, and nuts can be exchanged for the fruit/nut of your choosing, but nutrition info has been calculated according to ingredients listed. Number of Servings: 30

Ingredients

    6 c. rolled oats
    cinnamon (cover oats generously)
    3/4 c. unsweetened, flaked, coconut
    3/4 cup seeds: 1/4 sesame, 1/2 pumpkin
    1 c. chopped pecans
    2/3 c. coconut oil
    1 c. honey

    1/2 c. raisins
    1/2 c. dried cranberries

Directions

Mix all ingredients except dried fruit in a large bowl. Spread onto 2 jelly roll pans that have been sprayed with nonstick spray or covered with a Silpat nonstick baking pad.

Bake in 350 degree oven for 10 minutes. Stir and bake for another 7-10 minutes. Cool on pans, stirring once or twice as it cools. Add chopped dates, raisins or other dried fruit at this time.

Serving Size: Makes 30 - 1/2 c. servings
