Sauteed Carrots with onions and fresh basil

Introduction

This is a dish my husband threw together one evening. This is the perfected version. This is a dish my husband threw together one evening. This is the perfected version.
Number of Servings: 6

Ingredients

    2 Tbsp Olive oil
    3 Cups sliced carrots
    1 Cup chopped onion
    2 Tbsp finely chopped fresh basil
    1 oz. Dry Vermouth(optional)


Directions

Heat olive oil in large saute pan. Add carrots and saute, over medium heat, for 10-15 minutes or until "crisp-tender". Add onion and saute for 10 minutes more or until onion is clear. Add basil. Remove carrots, onion, and basil from pan. Deglaze pan with dry vermouth. Pour sauce over carrots and serve.

Serving Size: Makes 6 1/2-cup servings
