Unstuffed Peppers

Introduction

Just as yummy as stuffed peppers but easier prep. Just as yummy as stuffed peppers but easier prep.
Number of Servings: 12

Ingredients

    2 lbs lean ground beef
    3 cups chopped green bell peppers
    1/2 cup chopped onion
    2 cloves garlic minced
    3 cups cooked basmati or white rice
    2 cups tomato sauce
    1 can diced tomatoes
    1 TBS olive oil

Directions

Brown ground beef, drain off fat, and set meat aside. In separate pan, saute peppers, onions and garlic in 1 TBS olive oil until vegetables are tender. Combine ground beef, vegetables, cooked rice, diced tomatoes with juice and tomato sauce. Mix well and turn into casserole dish. Bake at 350 degrees for 20-30 min until heated through.
NOTE: You may want to add more sauce if it seems too dry, and you can use either 8 oz cans of tomato sauce or marinara. You may also want to top with toasted buttered bread crumbs, but I have not included them in this recipe's calorie count.
