Introduction

This is a very easy recipe and great to use for leftover ham. Great cold and can be used for breakfast, lunch or light dinner. Add a side salad and you've got a great light lunch or dinner. Ingredients

    4 medium eggs
    8 oz regular cream
    1 cup broccoli, blanched
    1/2 onions,chopped
    1/2 cup cheddar cheese, shredded
    1 cup ham, diced
    dash of salt
    1/4 tsp.cayenne pepper

Directions

Pre-heat oven to 350 F. Blanch broccoli pieces in boiling water for 4 minutes. Drain and set aside.

Chop ham into diced pieces. Cut onions finely. Shred cheese.

In a mixing bowl, combine eggs and cream. Add salt and pepper.

In a tart pan, spread the ham, onions, broccoli and cheese around the bottom of the pan evenly.

Add the egg mixture. Bake for 45 minutes or until the top turns golden brown and an inserted knife comes out clean.

Serving Size: makes 8 slices in a tart
