Ingredients

3 large eggplant, sliced 1/4 inch slices
spaghetti sauce 5 cups
cottage cheese 2 cups non fat
mozzerella cheese, part skim milk 7 oz
fat free crumbled feta cheese 4 oz
olive oil - 1 tbsp
Directions
Slice eggplant and salt. leave to "weep" for 15 minutes. Then rinse. Spray eggplant with olive oil spray and fry on both sides. Put small amount of sauce in 8" square pan. make a layer of eggplant slices, top with half mozzarella cheese. add sauce, eggplant, then cottage cheese. then more sauce eggplant, feta cheese, sauce, eggplant, sauce and other half of mozzarlla cheese. Bake 375 for 40 minutes.
