Introduction

I make this omelet on days when I may not be able to eat again for hours. It really picks me up and gets me going. However, on the weekends, I make it and share with my husband. Ingredients

    2 large eggs - beaten until mixed thoroughly
    1 Tbsp olive oil
    1 large mushroom - sliced or diced
    1 thick slice of onion - chopped
    1 clove of garlic - minced
    1 Italian tomato, diced

Directions

Heat the olive oil in a non-stick pan. Add onion, saute until clear. Add mushroom and garlic, cooking until mushroom is soft. Add beaten eggs - cooking as an omelet until eggs are set on top. Flip over and place tomatoes on top if you want them hot. As soon as the bottom is gently browned, slide onto a plate. If you want cold tomatoes, add them now.

Serving Size: Makes one large omelet - can be shared~
