1 Cup + 2 tbsp Tempura Batter Mix 3/4 Cup Ice Cold Water 1 1/2 lbs sliced zucchini (unpeeled)
Clean and slice zucchini, dry thoroughly. Pour 2 inches (minimum) vegetable oil into a deep frying pan, wok or electric fryer. Preheat to 375F (corn or peanut oil works best since they can be heated to high temperatures without burning, thus reducing oil absorption). Bled mix and water in medium bowl; about 30 strokes (batter will be lumpy). Dip food, a few at a time, into batter. Drain off excess batter. Gently place pieces in preheated oil. Deep fry 1-2 minutes until golden. Drain on paper towles.
