Berry and Spice Whole Wheat Bran Muffins

Ingredients

    3 c. whole wheat flour
    2 c. wheat bran, crude
    1 c. old fashioned oats
    1 1/2 tsp. baking powder
    1 1/2 tsp. baking soda
    1 1/2 tsp. cinnamon
    1/2 tsp. allspice
    1/4 c. granulated sugar
    1/4 c. brown sugar
    2 - 2 1/2 c. skim milk
    12 oz chobani greek yogurt, nonfat vanilla
    3 egg whites
    3 tbs. canola oil
    2 c. blueberries, frozen or fresh; or 2 medium apples, diced

Directions

Preheat oven to 375 degrees.

In a bowl, mix together flour, and next 8 ingredients. Set aside. In a separate bowl, mix together 2 1/2 c. milk, yogurt, egg whites, and oil. Add dry ingredients and stir until moistened. Fold in blueberries.

Lightly grease muffin tins. Scoop spoonful of batter into each muffin tin. Bake for 19-22 minutes or until toothpick inserted comes out clean. Makes 32 regular sized muffins or 16 large.
