Introduction

Number of Servings: 6

Ingredients

    Chicken Breast, no skin, 2 units
    La Victoria Thick'n Chunky Salsa Verde Medium, 19 tbsp
    Diced Chilies, 4 serving
    Beans, black, 1 cup
    Yellow Sweet Corn, Canned, 1 cup
    Tomato products, Hunts Diced Tomatoes w/ Basil, Garlic, and Oregano, 3.5 serving
    Onion powder, .1 tsp
    White Rice, long grain, 1 cup
    Crushed Red Pepper Flakes, 1 tbsp

Directions

Spray pot with non-stick cooking spray.
Place chicken breasts in bottom of pot.
Sprinkle the chicken with a dash of onion powder.
Slather your diced chilies over the chicken.
Mix/rinse your beans and corn (I use a colander) and pour over top the chicken.
Pour your can of tomatoes with the juices over the entire mix and try to ensure you get an even layer/spread of the tomato bits.
Shake well your Salsa Verde and pour the jar in over everything.
Sprinkle in about a tablespoon (1 tbsp) crushed red pepper flakes - if you want something spicy/hot.
Cover and set on Low

About an hour before serving, add your cup of rice. Mix it in well. You may need to add more liquid at this point (not sure, haven't made this one before) so you can use a touch of water or chicken stock if you prefer. Cover again and check periodically through the next hour; stirring when necessary to avoid sticking/burning of rice kernels.

When rice is done, serve. You can cut or shred the chicken for ease of portioning. You may use a bed of lettuce, tortillas or serve over chips... It is up to you and your crowd.
