Autumn Fruit Crisp

Introduction

Number of Servings: 20

Ingredients

    12 pears, crisp apples
    5 tbsp lemon juice
    1 cup sucanat
    1 1/2 tsp cinnamon
    1 1/2 tsp nutmeg
    3/4 cup whole wheat flour
    3/4 cup unbleached flour
    3 cups rolled oats
    1 1/2 cups coconut oil
    1 cup walnuts, chopped (optional)

Directions

Peel, core and chop fruit; toss in a bowl with lemon juice.
In separate bowl, combine sucanat, cinnamon and nutmeg; add to the apples and combine.
In another bowl, combine flours, fructose and oats. Portion out coconut oil in Tbsp size portions small pieces, and cut into flour with pastry blender until mixture is crumbly.
Stir in walnuts, if desired.
Butter baking dish - at least 9x13
Spread fruit mixture n bottom of baking dish, then sprinkle with flour mixture.
Bake at 375 for 45 minutes, or til fruit is tender and topping is slightly browned.
Serve warm with fresh whipped cream.
