Kicky Roast Beef and Carmelized Onion Roll-ups

Introduction

Ingredients

    Deli-sliced roast beef, 14 oz
    Cream cheese, 2 Tbsp.
    Light Mayonnaise, 3 Tbsp.
    Horseradish, 2 Tsp.
    Onions, 1 large, sliced
    Olive oil, 2 Tbsp.
    Butter, 2 Tbsp
    Salt and Pepper to taste

Directions

Slice the onions and add them to hot oil and butter in the pan. Cover and let them soften and carmelize, stirring every now and then. They will reduce and get soft and brown and oh so yummy!.

Stir together mayo, softened cream cheese and horseradish with a dash of salt and pepper. (You can always add more or less horseradish depending on your taste).

I got two, seven-ounce packages of sliced roast beef as the deli counter I went to, didn't have the "off-the-bone" type I normally like. I'm going to put two slices together to make one roll-up, so I should have 9 servings total of about 1.5 oz of roast beef.

I placed the roast beef on a cooky-sheet and spread it with an equal amount of the horseradish sauce. I then topped it with the cooled onions and rolled it up.
