Spicy 2 Pepper Hummus

Introduction

Had a Poblano Pepper, and I didn't know what to do with it, so I decided to make some yummy hummus. This is great on sandwiches, dipping veggies in, or plopping on a salad! Had a Poblano Pepper, and I didn't know what to do with it, so I decided to make some yummy hummus. This is great on sandwiches, dipping veggies in, or plopping on a salad!
Number of Servings: 16

Ingredients

    1 (15 ounce) can garbanzo beans, drained (reserve some juice from the can)
    1/4 of a roasted Poblano Chili Pepper (grill it till chared and then peel the skin away)
    1 small chipotle pepper in adobo sauce
    3 tablespoons lime juice
    1 clove garlic
    1/2 teaspoon ground cumin
    1/4 teaspoon salt
    1 tablespoon chopped fresh parsley or cilantro

    Note: Where gloves when handling a hot pepper, otherwise the oil from the pepper will burn your hands! trust me on this, it happened to me.

Directions

In a food processor, add your pepper, garlic, garbanzo beans (peel the beans if you have time and patience), lime juice, cumin, salt and parsley. Process together, if to thick add some juice from the garbanzo beans. Process until creamy.

Refrigerate for best flavor.

This can be done with a sweet bell pepper too, if the Poblano pepper and chipotle is to hot.

makes about 1.75 - 2 cups

Serving Size: 2 Tbsp. servings - makes 32 Tbsp total
